Guess what this delicious pesto is made with?
…Carrot-tops! ??
Don’t let your carrot tops go to waste! They make a fabulous pesto.
Here’s the recipe:
? 2 cups carrot tops(*cooked – see below)
? 1/2 cup walnuts
? 1 clove garlic (2 if you like it more garlic-y)
? 1/2 cup olive oil
? 1 tbsp lemon juice
? Salt and pepper to taste (approx 1/8 tsp)
Optional add-ins:
? Parsley
? Green onion
Directions:
- Boil a pot of water.
- Add the carrot tops and cook for 3 min.
- Strain them in a colander and rinse with cold water. Let dry while you prepare the rest. You may also need to pat dry with paper towel, or leave to dry and come back to it.
Once the carrot tops are basically dry, blend all the ingredients in a food processor, and it’s done ?
Easy and delicious.
