Chocolate Chunk & Lotus Heart Brownies

It’s week two of ‘?????-????-??’, a terrible pun-name of my own creation, for a month of recipes for the ?, using Lotus Seeds – aka Lian Zi in TCM.⁣

I adapted this recipe from the powerhouse @powerhungrycamilla – a great insta to follow if you have food sensitivities (or even if you don’t!). I highly recommend her creations.⁣

What is a tiger nut? Contrary to the name, a tiger nut is tiger-free (phew!) and also nut-free (weird! But true!)⁣

It is a root vegetable, a small tuber that tastes sweet and is packed with:⁣

✅ magnesium⁣
✅ fiber.⁣

And here’s the recipe!

Ingredients:

  • 1/2 cup nondairy milk
  • 1 tablespoon ground chia seeds
  • 1/2 cup tigernut flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup tapioca starch
  • 1 teaspoon baking soda
  • 1/2 tsp sea salt
  • 1/2 cup maple syrup (could do 1/4 cup maple syrup with 1/4 cup apple sauce if preferred)
  • 1/3 cup melted coconut oil
  • Handful of chopped unsweetened chocolate (or 100% chocolate chips)
  • Handful of cooked Lotus/Lian Zi

Directions:

To cook the Lotus:

  1. Rinse the lotus in a strainer
  2. With a ratio of 1:3 lotus to water, soak for 20min, then cook like you would cook rice. Stovetop method: bring to boil then simmer for 20min. Instapot method: Rice cooker setting or pressure cook for 7min.

To bake the brownies:

  1. Combine the milk & chia seeds to gel while you prepare the rest
  2. Preheat the oven to 350F and line an 8 inch pan with parchment paper
  3. Mix the wet ingredients & dry ingredients separately; then combine.
  4. Mix all dry ingredients together except the unsweetened chocolate / chocolate chips and the Lian Zi
  5. Mix all the wet ingredients together
  6. Combine wet & dry ingredients
  7. Stir in a tbsp of lotus seeds
  8. Pour batter evenly in the pan
  9. Sprinkle with chocolate chunks & remaining lotus 
  10. Bake for 18 minutes
  11. Cool completely before cutting into squares
  12. Enjoy!
