Peach and Pecan Blondies

🍑𝗣𝗲𝗮𝗰𝗵 & 𝗣𝗲𝗰𝗮𝗻 𝗕𝗹𝗼𝗻𝗱𝗶𝗲𝘀 🍑


I love using seasonal ingredients to get creative in the kitchen. Behold: my peach season manifestation, using local peaches from the Farmers Market. 


I also had a bunch of ingredients to use up in my cupboard, which was part of the challenge. But it turned out! And here’s the result…


🍑1/2 cup tigernut flour

🍑1/4 cup cassava flour

🍑1/2 cup whole pecans

🍑2 eggs (I used duck eggs)

🍑2 medium sized peaches, peeled

🍑1/4 cup coconut oil

🍑1/4 cup maple syrup

🍑1/3 cup + 1 tbsp oat milk

🍑3/4 tsp baking soda🍑

3/4 tsp baking powder

🍑1/2 tsp salt

🍑1/2 tsp cinnamon

🍑…and one mini zucchini because I had it in my fridge 🙂


Blend all in the blender, and pour into a lined 8×8 inch pan.


Sprinkle with extra chopped pecans, if desired.


Bake for 35min or until toothpick comes out clean.


Let cool. Eat with fresh peaches 😊
