I love using seasonal ingredients to get creative in the kitchen. Behold: my peach season manifestation, using local peaches from the Farmers Market.
I also had a bunch of ingredients to use up in my cupboard, which was part of the challenge. But it turned out! And here’s the result…
?1/2 cup tigernut flour
?1/4 cup cassava flour
?1/2 cup whole pecans
?2 eggs (I used duck eggs)
?2 medium sized peaches, peeled
?1/4 cup coconut oil
?1/4 cup maple syrup
?1/3 cup + 1 tbsp oat milk
?3/4 tsp baking soda?
3/4 tsp baking powder
?1/2 tsp salt
?1/2 tsp cinnamon
?…and one mini zucchini because I had it in my fridge 🙂
Blend all in the blender, and pour into a lined 8×8 inch pan.
Sprinkle with extra chopped pecans, if desired.
Bake for 35min or until toothpick comes out clean.
Let cool. Eat with fresh peaches ?
