A nourishing, gluten free, sugar free fall favourite.
Food is medicine, and here’s a breakdown of the ingredients in Chinese medicine nutrition:
- Oats nourish our digestive organs and the nervous system.
- Pears help to moisten the lungs, nourish yin and resolve phlegm
- Ginger strengthens the immune system, aids the stomach and regulates digestion
Dry Ingredients:
- 2.5 cups flour (I used gluten free oat flour)
- 2 tsp turmeric
- 1 tsp cinnamon
- 1 tsp ground cardamom
- 1 tsp nutmeg
- 1 tsp baking powder
- 1 tsp baking soda
- 1/8 tsp salt
- a dash of stevia
Wet Ingredients:
- 1/2 cup maple sytup
- 1/2 cup melted coconut oil
- 2 eggs
- 3/4 cup unsweetened coconut milk
- 4 tbsp grated ginger
- 3 small Bartlett pears, diced
Directions:
- Preheat oven to 375.
- Mix dry ingredients together
- Mix wet ingredients together – except the pears, set pears aside
- Mix wet + dry Ingredients together
- Stir in the pears
- Pour into muffin tins (lined or greased)
- Bake for 27-32min
Makes 12-14 muffins.
