Pear & Ginger Muffins

A nourishing, gluten free, sugar free fall favourite.

Food is medicine, and here’s a breakdown of the ingredients in Chinese medicine nutrition:

  • Oats nourish our digestive organs and the nervous system.
  • Pears help to moisten the lungs, nourish yin and resolve phlegm
  • Ginger strengthens the immune system, aids the stomach and regulates digestion

Dry Ingredients:

  • 2.5 cups flour (I used gluten free oat flour)
  • 2 tsp turmeric
  • 1 tsp cinnamon
  • 1 tsp ground cardamom
  • 1 tsp nutmeg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/8 tsp salt
  • a dash of stevia

Wet Ingredients:

  • 1/2 cup maple sytup
  • 1/2 cup melted coconut oil
  • 2 eggs
  • 3/4 cup unsweetened coconut milk
  • 4 tbsp grated ginger
  • 3 small Bartlett pears, diced

Directions:

  1. Preheat oven to 375.
  2. Mix dry ingredients together
  3. Mix wet ingredients together – except the pears, set pears aside
  4. Mix wet + dry Ingredients together
  5. Stir in the pears
  6. Pour into muffin tins (lined or greased)
  7. Bake for 27-32min

Makes 12-14 muffins.
