Contrary to the name, a tiger nut is tiger-free (phew!) and also nut-free (weird! But true!)
It is a root vegetable, a small tuber that tastes sweet and is packed with nutrients & fiber. ??
In one bowl, mix the following ingredients:
· 2 cups tigernut flour
· 1 cup almond flour (or you could just use 3 cups tigernut flour to make it nut free)
· 6 tbsp ground flax
· 2 tsp cinnamon
· 1/2 tsp salt
In a separate bowl, mix together:
· 2/3 mashed banana
· 1 cup blueberries
· 1 cup water
· 2/3 cup nut or seed butter of choice. I used a blend of coconut butter, almond butter & tahini – leftovers of what we had around. (You could use sunflower butter as per nut-free original recipe)
Mix the dry & wet ingredients together.
Divide into muffin tins or silicone muffin cups.
Makes approx 16 muffins.
I baked these for 32 min.
