So healthy it doesn’t have to be Thanksgiving to eat it. (And it also makes a great breakfast ?)
My dad has a sweet tooth and I made this for my him when he was recovering from surgery. He didn’t even notice it’s:
??????-????, ?????-????, ?????-????, ???-????, ??????????-????! (jk on that last one, just seeing if you were paying attention ?)
Instead, this recipe is:
???????-????, ??????????, ??????.
Ingredients & Directions for each:
?????:
?½ cup coconut flour
?½ cup almond flour
?¼ tsp sea salt
?1 dash of stevia (optional)
?3 flax eggs (or 2 large eggs) (3 tbsp flax seeds mixed with 6 tbsp water, let sit for 5-10 min until gelatinous)
?¼ cup coconut oil, slightly melted
1. Mix altogether, getting rid of any lumps.
2. In an 8 or 9 inch pie plate, press the dough evenly around the bottom & sides.

?1 + ½ cans of pumpkin puree (unsweetened)
?¼ cup maple syrup
?⅓ cup unsweetened plain almond milk
?3 tbsp arrowroot powder (or sorghum flour, or cornstarch)
?2 flax eggs (2 tbsp ground flax, mixed with 4 tbsp water, let sit for 5-10 min until gelatinous)
?2 tsp pumpkin pie spice (cinnamon, ginger, nutmeg, clove)
?¼ tsp sea salt
1. Preheat the oven to 350 degrees.
2. Mix all the filling ingredients in a bowl. Pour the filling into the pie crust.
3. Bake for 60 – 70 min.
4. Let cool before eating
