Healthy AF Thanksgiving Pumpkin Pie

Sugar free gluten free Thanksgiving Recipe

So healthy it doesn’t have to be Thanksgiving to eat it. (And it also makes a great breakfast ?)⁣

My dad has a sweet tooth and I made this for my him when he was recovering from surgery. He didn’t even notice it’s: ⁣

??????-????, ?????-????, ?????-????, ???-????, ??????????-????! (jk on that last one, just seeing if you were paying attention ?)⁣

Instead, this recipe is:⁣

Ingredients & Directions for each:⁣

?????:⁣

?½ cup coconut flour⁣
?½ cup almond flour⁣
?¼ tsp sea salt⁣
?1 dash of stevia (optional)⁣
?3 flax eggs (or 2 large eggs) (3 tbsp flax seeds mixed with 6 tbsp water, let sit for 5-10 min until gelatinous)⁣
?¼ cup coconut oil, slightly melted ⁣

1. Mix altogether, getting rid of any lumps. ⁣

2. In an 8 or 9 inch pie plate, press the dough evenly around the bottom & sides.⁣

?1 + ½ cans of pumpkin puree (unsweetened)⁣
?¼ cup maple syrup⁣
?⅓ cup unsweetened plain almond milk⁣
?3 tbsp arrowroot powder (or sorghum flour, or cornstarch) ⁣
?2 flax eggs (2 tbsp ground flax, mixed with 4 tbsp water, let sit for 5-10 min until gelatinous)⁣
?2 tsp pumpkin pie spice (cinnamon, ginger, nutmeg, clove) ⁣
?¼ tsp sea salt⁣

1. Preheat the oven to 350 degrees. ⁣
2. Mix all the filling ingredients in a bowl. Pour the filling into the pie crust. ⁣
3. Bake for 60 – 70 min. ⁣
4. Let cool before eating⁣
